How we work in the West Coast
The chef arrives four to seven hours before you plan to eat, depending on the meat, and sites the spit with the wind in mind — in the West Coast that means open, flat and fully exposed - this is kite-surfing coast for a reason. A whole lamb goes on at 600 g a head and takes four to six hours, so the fire is lit well before anyone arrives. The chef stays with it for the whole cook, carves, serves, then packs down and takes everything away.
