All three change by region, and across the Cape Winelands they work out as follows.

Spit braai Paarl & Stellenbosch: travel, wind and access

Distance from our base30-55 km — Stellenbosch and Paarl fall in the 30-50 km band (R500-R800); the far end of Franschhoek and Wellington can reach the 50-100 km band (R1,000-R1,500). Shown on the quote.
Wind exposureThe valleys are the most sheltered ground we work. Still evenings are normal, which is why the long slow cook suits a Winelands venue better than anywhere else.
Typical venueWine farms and working estates, most with a dedicated function lawn and a kitchen we can stage from.
AccessFarm gates and gravel approaches are the issue - we need to know the last 500 m before we commit a loaded trailer to it.

How we work in the Cape Winelands

The chef arrives four to seven hours before you plan to eat, depending on the meat, and sites the spit with the wind in mind — in the Cape Winelands that means the valleys are the most sheltered ground we work. A whole lamb goes on at 600 g a head and takes four to six hours, so the fire is lit well before anyone arrives. The chef stays with it for the whole cook, carves, serves, then packs down and takes everything away.

Farm gates and gravel approaches are the issue - we need to know the last 500 m before we commit a loaded trailer to it.
